Recipes Just in Time for Your Labor Day Gathering

Terrific BBQ Recipes

Fantastic recipes just in time for your late summer get-together!

Tequila Baby Back Ribs

2 Tbsp. chili powder 1 tsp. cayenne pepper
2 Tbsp. paprika 1 tsp crushed red pepper
1 Tbsp. garlic powder 1 chopped onion
1 Tbsp. salt 1 lg. handful chopped cilantro
1 Tbsp dried oregano 3-4 cloves garlic, diced
2 tsp. cumin 1 bottle (fifth) tequila
1 tsp. black pepper 1 lemon, halved
1 tsp. white pepper 2 limes

Combine all the above and season 2 full slabs of ribs, each cut in half. Refrigerate 2-4 hours.  Put half of 1 slab in 1-gallon ziploc bag, layer with onion, cilantro, and garlic. Place other half on top, repeat with onion, cilantro, and garlic. Pour in half bottle tequila. Add juice of half lemon and 1 lime. Seal. Repeat with other slab. Marinate at least 4 hours. Grill with onion, cilantro, and garlic at 350 degrees until done.

 

Honey Mango-Glazed Baby Back Ribs

1 c. honey 4 ripe mangos, cubed
2 full racks, baby back ribs 1 tsp. pepper
1 can chipotle peppers in adobo sauce 1 Tbsp. salt

Remove ribs from packaging, rinse and pat dry. Remove membrane from backside of ribs. Place ribs in shallow pan, sprinkle salt and pepper evenly and set aside. In a small saucepan, add chipotle/adobo, mango and honey. Cook over medium heat, stirring constantly until cooked down and thick enough to coat the back of a spoon. Using the slow and low method of BBQ'ing, set temperature to 225-240 degrees. If using coals, let them burn off and move over to one side of the grill. Wrap the ribs and 2/3 of the sauce mixture in aluminum foil tightly and place on grill. Close lid. After 2 hours, flip the ribs and let cook for another 2 hours. Open the aluminum and remove ribs, place them on grill and brush on remaining sauce and let cook another 30 minutes.

    After a highly successful debut in 2021, Brick West Brewing Co. brings back their West End Night Market for a second season. Every Monday night through September, including Labor Day, the brewery hosts a diverse group of food, produce, and craft vendors for an evening of fun. Feast World Kitchen, a non-profit restaurant with a rotating lineup of chefs preparing international cuisines, spearheads the assortment of food trucks and vendors. Live music provides a festive background. Hours are 5 p.m. - 9 p.m.

  • Pig Out in the Park - Riverfront Park, 507 N. Howard St., Spokane, WA 99201
    Get your chow on at Pig Out in the Park, a lively Labor Day weekend fest held at popular Riverfront Park. With 50 food booths offering 250 menu items, "you'll never eat it all." Check out artisan crafts and other items at 35 public market booths. More than 100 concerts over four stages include music from KISS, Tom Petty, and Green Day tribute bands, along with a variety of performers in a range of styles. The park's thrilling Numerica SkyRide will also be open for families, with 50 percent off tickets when you mention "Locals only" at the cashier stand. Pig Out in the Park takes place Wednesday, August 31 through Monday, September 5, from 11 a.m. - 10 p.m. Admission is free.

  • Mica Moon - 23403 E. Mission Ave., Suite 111, Liberty Lake, WA 99019
    Celebrate the freedom of summer's last long weekend by soaring across the treetops near Liberty Lake homes for sale. With zipline tours and aerial obstacle courses, Mica Moon features plenty of thrills and chills. Both activities run approximately three hours, including a scenic UTV ride to and from the grounds. Choose the combo tour for a day-long adventure. Prices start at $55 for adults and $44 for ages 7-12. Visit the website for schedule and reservations.

  • Big Barn Brewing Company - 16004 N. Applewood Ln., Mead, WA 99021
    Just minutes from Mead homes for sale in scenic Green Bluff is a working farm that produces beer from their own home-grown ingredients. Owners Craig and Jane Wood also make their home on the grounds of Big Barn Brewing Company, built on land purchased from Craig's father. Their signature brew, Lone Pine Pilsner, is named for the majestic Ponderosas that dot the landscape. Local food trucks will also be on hand during Labor Day weekend. Big Barn is open Wednesday through Sunday from noon - 8 p.m.

  • Mount Spokane State Park - N. 26107 Mount Spokane Park Dr., Mead, WA 99021
    Take in the incredible beauty of the Pacific Northwest at Mount Spokane State Park. As the website boasts, the park offers 100 miles of trails, so you could hike for days and never see the same view twice. Don't be surprised to find a moose or two sharing the path along the way. Leashed pets are welcome. If you're feeling restless but lazy, the drive to Mount Spokane is just as incredible. Park hours are 6:30 a.m. - dusk. Admission passes are $10 for the day or $30 annually.

  • The Thursday Market - 924 S Perry Street, Spokane, WA 99202
    The Thursday Market is a small South Perry area market that runs from May to October. Every Thursday, starting at 3 PM and ending at 7 PM, vendors such as Achele Farms, Hierophant Meadery, Good 'Dilla, and Redline Jewelry gather to sell their wares.

    This market is intended to serve as a place to showcase the products of local growers and craftspeople while also providing quality fresh food at an affordable price.   • The Spokane Valley Farmers Market - 2426 N Discovery Place, Spokane Valley, WA 99216
    The Spokane Valley Farmers Market operates each Friday between 4 PM and 8 PM from June to mid-September. This event is a bit more entertainment-oriented than most on this list, incorporating live music and other performances to turn the shopping space into a great place to spend a fun evening.

    This event is also part of the KERNEL (Kids Eating Right – Nutrition and Exercise for Life) program for children 5 to 12, offering a free educational activity to help kids learn more about where their food comes from. 

  • Fairwood Farmers Market – 319 W Hastings Road, Spokane, WA 99218
    The Fairwood Farmers Market is open every Tuesday between 3 PM to 7 PM from May to October. Its stated mission is to bring more commercial activity to the Fairwood District of North Spokane.

    In keeping with this goal, the market has attracted a wide variety of vendors from all around the Spokane area. Shop for some fresh steaks at Browning Beef, pick up a treat at The Scone Ranger, or browse the scented homewares available from Shady Slopes Lavender – you can get it all done in just a few steps. 

  • Spokane Farmers' Market – 20 W 5th Avenue, Spokane, WA 99202
    The Spokane Farmers' Market has been bringing fresh produce and other goodies to the city's residents since 1998. It is currently open Wednesdays and Saturdays from 8 AM to 1 PM until the end of October, giving you plenty of time to stop by before the end of the season.

    The bulk of their vendors sell typical market items like meat, eggs, baked goods, produce, and fresh flowers. A few also carry products like hard cider, candles, and Italian sodas.
